Make them earn it!
Restaurangkritikern i New York Times, Frank Bruni, har ju numera en blogg - "Diner's Journal" - och i den ondgör han sig idag över ofoget hos restauranger, t.ex. svenska Aquavit, att lägga till obligatorisk drick på notan på speciella dagar, t.ex. på Alla Hjärtans Dag:
Och ändå ger man extra dricks här förutom de obligatoriska.
Hakan Swahn, an owner of Aquavit, told me in a telephone conversation that the restaurant’s managers added an automatic gratuity last New Year’s Eve and again on Valentine’s Day and that the mandatory tip’s existence was printed on the Valentine’s Day menu.
Mr. Swahn, who is Swedish, noted that in Sweden automatic tips are routinely added. 'Service is not as good there as in New York City,' he said, citing predetermined gratuities as a probable reason.
Och ändå ger man extra dricks här förutom de obligatoriska.

Jag har för länge sedan accepterat den obligatoriska "serviceavgiften" som en engångsprishöjning (är det 10 % ?) och ger sedan dricks enligt kontinentala regler ovanpå det. Det lönar sig definitivt om man värdesätter god service. Man får anpassa restaurantbudgeten därefter (färre besök men bättre service.)
"Service inkluderad" är ju rena öststatsidén men i Sverige naturligtvis grundad i den grundläggande gullighetsprincipen. Servitören: "Du skall inte sätta betyg på mitt jobb bara för att du har pengar." Gästen: "Du skall inte ha extra betalt bara för att du gör ditt jobb." Båda i kör: "En ann' är så god som en ann'."

I worked as a waitress to put myself through part of high school and all of college and I can say that mandatory tips are necessary. As a waitress, we made ca. 25:- (no, I did not forget a zero) and hour and the rest was to be made up with tips. Some nights were great and we would make quite a bit, but other nights were so slow you wondered if you would be able to pay your rent. As a waitress, you could never count on a steady income and thus be unable to plan for the future. Serving food and earning a wage based on tips becomes a dead-end and ultimately poverty-ridden job. It is perfect for the student, who can live on noodles and beans at the end of the month, but not a good option for those with families to support. Steady wages (tips included)at least give the waitress a chance to plan and save, without the surprise of an off night(s)...
